What's for dinner Mom?















Crumbed salmon burger on wholegrain toast

475g canned salmon
1 small carrot, grated
1 small zucchini, grated
1 small onion, chopped finely
1 egg
1 potato, chopped coarsely

1/4 cup plain flour
1 extra egg
1/4 cup breadcrumbs

Steam potato in microwave oven for 4-5 minutes. Drain and mash. Mix all ingredients until well combined. Divide into 4 equal portions (daddy will have 2). Shape into patties and flatten slightly. Roll in flour, dust off excess, roll in egg and coat with breadcrumbs.

Heat a little olive oil in a frypan. Cook patties for about 2-3 minutes each side or until golden brown. (Anything golden brown and crunchy is chips and is yummy!)

How many times have I been caught out sneaking in vegetables in Lachie's food? I must admit I am but a typical mom who does spend hours in the kitchen chopping, pureeing, mincing, hiding, scheming, plotting.......... all for my typical two and a half year old Lachster who thinks everything green is garbage and anything orange is baby poo.

I must say, this one's a hit! Sure he dissected it just to be sure but HAH, mom's getting good at this now. He wolfed it down in 60 seconds!

There you go, a deceptively delicious salmon burger with a side serve of garbage and baby poo, pushed aside...naturally.

What is it about moms and wholesome, healthy, brainy food anyways?

  1. i like this post! must post more ways to trick veges into their diet..:) i am so lazy to prepare Joel's food, but i must definitely give this one a try.
